Day 23 and 24: Leftovers and Taco Soup

It was a really busy weekend so I didn’t get a chance to post, but don’t worry, we still ate beans and rice!

On day 23 we just had bean and rice leftovers to clean out the fridge so I could go shopping for this week.

On day 24 we were planning on having friends for dinner but they had to postpone, so we ended up just having a simple taco soup and finished the crumbs of a bag of tortilla chips.

Taco Soup

  • 1 lb. ground beef or turkey
  • diced onion
  • 1 can green chilies
  • 1 pkg. taco seasoning
  • 2 cans diced tomatoes, undrained
  • 2 cans beans (black or pinto), undrained
  • 1 pkg. frozen corn (or 2 cans of corn)

Brown hamburger and onion; drain. Add remaining ingredients and simmer about 10 minutes. Serve with sour cream cilantro, shredded cheese, or crushed tortilla chips if desired.

Review: This thick soup reminds me of a mild chili. We really liked it, even my kids, although next time I may puree the tomatoes because they weren’t happy with the chunks. Since most of the items are canned goods it’s a great make-from-the-pantry meal.

**Look for peelies on Old El Paso products. I have seen several lately especially on boxes of taco shells that are good for a free packet of seasoning when you buy 2 Old El Paso products.
