Day 65: Cream of Broccoli Soup

Went for attempt number two at cream of broccoli soup thickened with pureed beans. This time I used a favorite soup recipe which I’ve made many times before, except that I don’t think I’ve made it since I’ve had kids. I should have taken this into consideration because the soup is made with milk and it has to be stirred constantly on a fairly low heat so it doesn’t scorch. Trying to do that the half-hour before dinnertime with three hungry clingy kiddos didn’t go so well and yes, I burned it. My husband said, just throw some cheese on it and we’ll eat it anyway! It looked perfect but tasted awful, so we had a quick dinner of waffles instead.

I will conquer this soup though because I love cream of broccoli and think the pureed beans will work great in it if I can just get it right.

Oh, and psssttt…Only 300 days to go! Woohooo!

    I’ve been enjoying your blog. Your beans and rice for a year is very interesting. We could really use something like that, but my husband has a very sensitive stomach and can’t take beans more than once a week. I’m going to try some of you sneaky lentil puree one of these days. Here’s a link to my cream of broccoli soup. You will have to adjust to add beans, but at least it only cooks with the milk for about 5 minutes. It’s very little people friendly because it doesn’t need to be watched constantly. Hope you enjoy it.
