Day 48: Brown Rice and Honey Pancakes

This recipe is adapted from one I found in the Weight Watchers Momentum Cookbook.
Brown Rice and Honey Pancakes
- 1/2 cup cooked brown rice
- 1 cup milk
- 2 TBSP honey
- 1/3 cup flour
- 3 TBSP wheat germ
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1/4 cup egg substitute, or 1 egg
Combine rice, milk, and honey in a saucepan and bring to a boil over medium-high heat. Reduce the heat and simmer for 5 minutes. Transfer mixture to a bowl and let cool about 10 minutes.
Meanwhile, whisk together flour, wheat germ, baking powder, and salt in a bowl. Stir in lukewarm rice mixture and egg. Cook batter on a hot griddle.
Review: These don’t cook up as nicely as traditional pancakes, and they stick quite a bit, so make sure you have lots of cooking spray available. Even though they didn’t look too great, I thought they had a great flavor. I thought the rice added an almost nutty texture, which I liked, but my husband didn’t. We served these pancakes with fresh fruit and a drizzle of syrup. It only made about 6 pancakes so I’ll definitely double the recipe next time. Good use of leftover rice.
