Sneaky Snacks: “Protein-Packed” Breakfast Waffles

We usually make waffles on the weekend for brunch or an easy Sunday evening dinner. A few weeks ago Jared said, “Hey you should come up with a waffle with BEANS in it!”

Well, you know I love a challenge so I played around one morning and came up with a recipe I was pretty happy with. Not only are they pretty healthy, they are tasty and really filling. We happened to have waffles back to back one day last week–the boxed mix kind for breakfast one morning, and the “protein-packed” ones the next morning. The second morning I noticed we ate less than we had the day before and that we were full all morning. I was pretty thrilled because my kids are nibblers and some mornings I feel like I am just getting breakfast cleaned up when they are asking for a snack.

Anyway, here’s the recipe:

“Protein-Packed” Breakfast Waffles

  • 1 cup flour
  • 3/4 cup wheat flour
  • 1/4 cup wheat germ
  • 1/4 cup sugar
  • 2 eggs
  • 1 1/2 cups skim milk
  • 1 tsp. vanilla
  • 1 TBSP baking powder
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 cup white bean puree*
  • 1/4 cup oil

Mix well and cook on hot waffle iron. Serve with your favorite waffle toppings.

*In a blender or food processor, puree white beans with a few TBSP water until smooth.
