Meal Planning Monday

This is one of those weeks where I have so much going on that I desperately need a meal plan, but am lacking the creativity or motivation to come up with anything exciting. Public accountability works well for me though, so I’m posting anyway.

Our meal plan for the week:

Breakfast:

Kiddo Lunch:

  • Popcorn shrimp, rolls, steamed broccoli
  • Cheese Quesadillas, oranges, pudding
  • Hard-boiled eggs, crackers, string cheese, pineapple
  • Mac and cheese, baby carrots
  • Spaghettios, ants on a log, yogurt
  • Lunch at a friend’s

Dinner:

  • Egg Rolls, brown rice, steamed broccoli
  • Grilled chicken, mashed cauliflower, garlic-roasted green beans, Buttermilk Cheddar Biscuits
  • Dinner out
  • Tilapia, Parmesan Quinoa, roasted veggies
  • Leftovers
  • Crunchy-shell Tacos, black beans, oranges
  • Thai Peanut Noodles with veggies
