Ramen Recipes: Chicken Noodle Soup
Since I got all that ramen for free I’ve been thinking about ramen noodles and what I can make with them. Some of the packages I got have thick flat noodles:
And looking at them reminded me of this:
Some amazing noodle soup I had while my husband and I were newlyweds visiting China. (I know, I look 12 in the picture.) I don’t remember much about it, just that I ordered it from a dive that would make your mom cringe, and that it was sooooo good. I usually ordered my noodles without meat (never could be sure what body part you’d get!), but there were often small bits of vegetable and green onion.
Anyway, I was remembering the soup and thought, why not try my own version with ramen? I had some shredded chicken and homemade broth in the freezer as well as lots of frozen vegetables, so it took me maybe five minutes to put this together:
Chicken Ramen Noodle Soup
- 1 package ramen noodles
- 2 cups chicken broth
- shredded chicken
- frozen peas
- seasonings of choice (garlic, onion, pepper, etc.)
Bring broth to boiling. Add noodles, chicken, and peas and cook until noodles are done (about 3 minutes). Add additional seasonings if desired.
I left out the seasoning packet because it doesn’t really thrill me, but add it if you like. The soup was pretty good. I mean, nothing that will ruffle your panties, but whatever. We’re talking about ways to use FREE ramen here. I ate it for lunch and thought it was much tastier than canned chicken noodle soup. And since I added homemade chicken broth and chicken, it tasted pretty homemade. And it was so fast, I’d for sure make it again!
