Rise and Shine

I created this felt element pack in honor of the most important meal of the day!

All this breakfast food talk has made me in the mood to try out some new recipes.  Yesterday I made some muffins for my picky eaters, and they LOVED this recipe!!  I thought they were pretty good too, and healthy!  Woohoo!  Here is the recipe if you’d like to try it too:

  • Blueberry Banana Muffins
    2/3 cup mashed ripe banana
    1 egg
    1/2 cup milk
    1/2 cup oil (may substitute applesauce)
    2 cups flour (or half white/wheat)
    1 tsp. baking soda
    1 tsp. baking powder
    1 cup whole blueberries

Beat together banana and egg until creamy.  Add milk and oil and beat well.  Add flour, soda, baking powder, and beat well.  Gently mix in berries.  Grease or line muffin tins and bake at 350F for 15 minutes.  Makes 12 muffins.

**I did use applesauce instead of oil, and I also didn’t have blueberries, but I did have a bag of frozen mixed berries, so I used that instead.  They were super yummy.  They are not very sweet though, so you may want to add a little sugar or Splenda if that matters.
