Vanilla Bean Cupcakes

Ok, I’m not really sure how “healthy” these cupcakes are, but they certainly are sneaky!

Vanilla Bean Cupcakes

  • white cake mix
  • 1 can white beans, drained and rinsed
  • 3/4 cup water

In  blender or food processor, puree beans and water until smooth. Add cake mix and mix well. Bake in cupcake paper lined tin at 350F about 18 minutes or until done.

Just a few things to warn you about here. Since these cupcakes don’t have the oil and eggs they are a tad bit drier. A bit of frosting or a scoop of ice cream takes care of that though :) . Also, unless your kids (or you) are used to a high-fiber diet you may want to limit the number of cakes they eat in one sitting. That’s all. 

Let me know if you like them! We couldn’t taste the beans at all! I’m going to have to do some more experimenting to see if I can get them moister, and I’d love to come up with a “from scratch” recipe too :) !

(Ryan thought the cupcakes needed a “topping” hence the coconut frosting and frozen blackberry!)
