Snowy Mountain Cookies Recipe

Snowy mountain cookies are a simple and delicious play on the mountain theme whether you’re teaching about faith to “move a mountain,” geology and mountain land forms, or just want a fun snack for a mountain-themed storytime.

Mountain Cookies (& a bookie!)

We made these soft, chocolatey mountain cookies during our preschool mountain-theme exploration that was inspired by a fascination with a gorgeous new title — On the Mountain.On the Mountain Usborne Books & More

(Did I mention gorgeous?!)

On the Mountain features paper-pieced illustrations (reminds me a bit of Eric Carle’s painted-paper style) super-fun pop-up pages, and simple facts about animals in the mountain habitat. (We actually loved the book we spent an entire week exploring the mountain theme!)

It’s the kind of book I’ll keep on a “special” shelf, reserved for couch-time snuggles and reading-time with me.

NOT because I think books should be off-limits to little hands. (In fact, I believe hands-on books are key to helping kids become excited about reading from the very beginning.) Just that there are some titles that are more fragile (the pop-ups in this case) or that I want to save for intentional learning or mommy-time.

I attended a mini-conference last weekend where they talked a lot about making TIME for our kids. And while the discussion was OF COURSE inspirational, it did have me feeling a little off.

Because in my situation, time WITH my kids isn’t necessarily a challenge since I stay at home with them during the day. But making INTENTIONAL time where I’m not just cleaning or doing errands, etc. with them in tow — that can be a challenge.

So, basically what I’m saying is,  On the Mountain is a pretty great choice for storytime! haha

And after reading our book(ie), we extended the fun by making/eating a cookie!

Snowy Mountain Cookies Recipe

INGREDIENTS FOR SNOWY MOUNTAIN COOKIES:

  • 1 pkg. dry chocolate cake mix
  • 2 eggs
  • 1/3 cup softened butter or cooking oil
  • vanilla or cream cheese frosting
  • triangle-shaped cookie cutter
  • rolling pin
  • flour or cocoa powder for rolling out dough

DIRECTIONS FOR SNOWY MOUNTAIN COOKIES:

1. Combine dry cake mix, eggs, and butter/shortening in a large mixing bowl. Mix until well combined.

2. Sprinkle your rolling mat/clean counter with a little flour or cocoa powder, pat dough onto surface, and roll chocolate dough to about 1/4 inch.  (It can be helpful to place this rolled dough in the freezer for 10-15 minutes until a bit more firm.)

3. Cut chocolate dough into triangle shapes.

4. Place triangles on a baking sheet, and bake in a preheated 350F oven for 8-10 minutes, or until tops begin to crack.

5. Allow cookies to cool completely.

6. Spoon frosting into a pastry bag, or place a Ziploc bag in a cup, then spoon the frosting into the bag. Cut off the tip.

7. Squeeze the frosting onto the tops of the cooled mountain cookies.

8. Allow frosting to set (fridge or freezer speeds this up) before serving.
