Beaver Dam Cookies – – an easy, chocolate no-bake cookie recipe that makes a perfect snack after a river-themed storytime, trip to the river, or really anytime! *wink*
A few months ago our family moved to a gorgeous valley and we’ve tried to spend a lot of time outside, exploring our area with short hikes and other outings. One of the most memorable adventures so far was hiking along the river and discovering a HUGE beaver’s dam!
I love when learning opportunities sneak up on us, as it often makes us want to go back later, dig in, and learn more. Weeks later, the kids (especially the younger ones) still mention that beaver dam and how cool it was to see the teeth marks in the surrounding trees. And now they have some personalized “prior knowledge” to look back on when we read books about the river or learn more about beavers.
The geeky-teacher side of me really loved watching this prior knowledge subtly unfold and intertwine with their playtime as we built River Habitats! By far, building a riverside beaver dam was the most popular play dough creation that afternoon.
And these chocolately no-bake “Beaver Dam Cookies” made a fun treat after our river play. Try them for your next snack after a nature walk or river-themed storytime!
INGREDIENTS FOR BEAVER DAM COOKIES:
- 12 ounces milk chocolate chips
- 12 ounces butterscotch chips (OR peanut butter chips)
- 12 ounces chow mein noodles
- parchment or waxed paper
DIRECTIONS FOR BEAVER DAM COOKIES:
Place the chocolate chips and butterscotch chips in a large bowl. Microwave in 30 second increments until melted. Stir until smooth.
Add the chow mein noodles to the bowl and toss until coated in the chocolate mixture.
Spoon 2 tablespoons of the cookie mixture onto a piece of parchment or waxed paper and shape into a mound, like a “beaver dam.”
Let cookies sit until firm, then serve!
