Oriental Chicken Salad

I recently got a bunch of  ramen I got for free (yay coupons!) so I made one of our favorite main dish salads with some of it.

Chicken Oriental Salad

  • 1 small head cabbage, shredded (or bag of coleslaw)
  • 2 packages Oriental flavor ramen noodles
  • slivered almonds (I like to toast them)
  • 4 TBSP sesame seeds
  • 2 chicken breasts, cooked and chopped
  • 3/4 cup green onion, chopped

Mix ingredients together and pour dressing over salad.

Dressing:

  • 1/2 cup canola oil
  • 3 TBSP vinegar
  • 1/2-1tsp. salt
  • 3/4 tsp. pepper
  • 3 TBSP sugar or Splenda
  • Oriental seasoning packets from noodles
  • few dashes of soy sauce

I also like to add a can of mandarin oranges to this salad. Leftovers don’t keep well.
