It’s actually my grandma’s banana bread recipe, I just bake it on a sheet pan and frost it with cream cheese heaven frosting.
Banana Cake
- 1/2 cup butter (or oil)
- 1 cup sugar (or Splenda)
- 2 eggs
- 1 1/2 cups mashed banana
- 1 TBSP lemon juice
- 3 tsp. baking powder
- 2 cups flour
- 1/2 tsp. salt
- 1 cup chopped nuts (optional)
Cream sugar and butter. Add eggs, beating well after each addition. Stir in bananas and lemon juice. Add dry ingredients and mix well. Add nuts if desired. Pour on greased sheet pan and bake about 20 minutes or until golden brown. Frost with cream cheese frosting and eat with a glass of milk, if desired.
Here’s a basic cream cheese frosting recipe: 8 oz. cream cheese, 1/2 cup butter, 2 cups powdered sugar, 1 tsp. vanilla, drizzle of milk. Beat until smooth.
