Red Velvet Sandwich Cookies

So you’re a boxed macaroni and cheese mom too!?! Then maybe this easy-peasy always popular cake mix cookie recipe will be just right for you! Plus, they’re cute and festive for a certain upcoming lovey holiday. . . And I’m positive they’ve be perfect for the Cookie and Milk Valentines.

Red Velvet Sandwich Cookies
  • 1 box red velvet cake mix
  • 1/2 cup butter, softened
  • 2 eggs

Combine cake mix, butter, and eggs. Spoon into balls onto a baking sheet and bake at 350F for 8-10 minutes. Allow to cool, then spread cookies with cream cheese frosting and sandwich together. Roll edges in festive sprinkles, if desired.

A few days ago I received a custom request for a full-sheet recipe card printable to coordinate with the Recipe Binder printables. I thought I’d make it available for all to enjoy. Simply downloadΒ and print out as many copies as you’d like, copy your favorite recipes onto the recipe card, punch holes in the side, and add to your recipe binder. Organization at it’s cutest!

    Thank you so much for making this recipe card free for all to enjoy! It’s perfect~I teach 2nd grade and we’re making recipe cards for our moms for Mother’s Day…Recipe for My Perfect Mom.     I just made some of these tonight! I found a similar recipe that put the cookies into heart shapes and they turned out really cute. and they were delicious!!

    Those cookies look SOOO yummy! How many cookies will one box of cake mix make?

      A cake mix makes about 30-36 cookies (depending on the size), but if you sandwich them together it will make half of that. πŸ™‚

    First, I love your style and will be using those recipe cards ASAP.
    Second, can you use that recipe to make any cake mix into cookies? I am loving that idea!

      @Niki, Definitely! We make “homemade oreos” with chocolate cake mix and vanilla or cream cheese frosting. To.Die.For.
      And yellow cake mix with chocolate chips make super fast chocolate chip cookies if you’re in a hurry.
