Chocolate Sweet Potato Spice Muffins

The kids were asking for a snack, and I was craving chocolate so we combined and we went to the kitchen to play!!

Here’s what we came up with. Not perfect–a touch dry, so I’ll be tweaking, but quite good. Kind of like a chocolate pumpkin bread. We loved them with a glass of milk!

My little test tasters. Yes, I let my kids taste batter with raw eggs. Please don’t judge.

Chocolate Sweet Potato Spice Muffins

  • 1 can white beans, drained and rinsed (you heard me!)
  • 1 1/2 cups sweet potato puree*
  • 1/4 cup water
  • 2 eggs
  • 1 cup sugar
  • 1 tsp. vanilla
  • 4 squares unsweetened chocolate, melted and cooled
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cloves
  • 2 cups flour
  • 1 cup chocolate chips

In a food processor or blender puree beans and water. Add sweet potato puree* and blend until very smooth. Add eggs, sugar, vanilla and melted chocolate; mix well. Stir in dry ingredients until incorporated. Add chocolate chips (optional, but come on, you’re giving them beans and sweet potatoes. It balances out, right?)

Bake at 350F in well-greased muffin tins about 18 minutes (12 minutes for minis).

* Three (4-oz) jars of sweet potato baby food is a good time-saving substitute. I look for brands that don’t have additives–just the veggie and water.

They tried unsweetened chocolate for the first time. That was fun to watch. In all fairness I did warn them they wouldn’t like it!

    batter almost ALWAYS tastes better than the real thing, lol! Looks yummy, I might have to try it sometime 🙂

    I’d think you were cruel if you DIDN’T let them taste the batter! Mine are wierd, they won’t touch it however much mummy is eating!
