The BEST Meatloaf (Bargain Meal of the Week)

When I scored Stovetop for $0.25 a box, Kelleigh sent me this meatloaf recipe with the claim that it was the BEST and easiest meatloaf and that I had to try it. Well I did.

I used to think I made pretty amazing meatloaf. But she was right. This really is the BEST meatloaf I’ve ever had! Really. It’s that good. (And sooooo easy!!)

Please don’t let the bad photo fool you.

Best Ever Meatloaf (Kraft calls it Easy Pleasing Meatloaf)

2 lb. lean ground beef
1 pkg.  (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2   eggs, beaten
1/2 cup KRAFT Original Barbecue Sauce, divided

Heat oven to 375°F. Place meat, stuffing mix, water, eggs and 1/4 cup barbecue sauce in bowl. Mix until just until blended. Shape into loaf in 13×9-inch baking dish. Top with remaining barbecue sauce. Bake 1 hour or until done.
**I’ve made this twice so far. One time I used ground turkey and ketchup (instead of beef and BBQ) and the other time I added very finely chopped carrots to the ground beef mixture. Both were delish and my family LOVED them.**
**For our family it worked to make this recipe into two smaller loaves and freeze one. To use frozen meatloaf, thaw and then bake as directed.**
 
Meal breakdown:
Ground Beef: manager’s special $1.29/lb (x2=$2.58)
Stove Top: used up my $0.25 a boxes, but stocked up more JUST for this recipe at $0.75/box
Eggs: $0.16
BBQ Sauce: FREE (after coupon, I stocked up over the summer)
Served with: mashed potatoes (FREE with coupon), garlic-roasted broccoli and carrots (manager’s special $0.50)

Total: $3.99 for meal (with a second meatloaf in freezer for a later meal)

    Hi,

    My youngest is allergic to eggs (we just found out), any suggestions on what to use to replace the egg in this recipe.

      Since the egg is just a “binder” in the meatloaf, I’d say it would probably be fine to just leave it out.

    Do you freeze your meatloaf before or after you cook it?

      I usually freeze it before, then thaw a day or two before and bake it for a fresh, homemade meal.
      But you can definitely cook first, then freeze. You would then thaw in the fridge and reheat slices in the microwave. Or even cook the meat mixture in meatballs or individual meatloaf portions, then thaw individual servings for lunches, quick dinners, etc.
