When I scored Stovetop for $0.25 a box, Kelleigh sent me this meatloaf recipe with the claim that it was the BEST and easiest meatloaf and that I had to try it. Well I did.
I used to think I made pretty amazing meatloaf. But she was right. This really is the BEST meatloaf I’ve ever had! Really. It’s that good. (And sooooo easy!!)

Since the egg is just a “binder” in the meatloaf, I’d say it would probably be fine to just leave it out.

Do you freeze your meatloaf before or after you cook it?

I usually freeze it before, then thaw a day or two before and bake it for a fresh, homemade meal.
But you can definitely cook first, then freeze. You would then thaw in the fridge and reheat slices in the microwave. Or even cook the meat mixture in meatballs or individual meatloaf portions, then thaw individual servings for lunches, quick dinners, etc.
